Some people claim it reverses the formation of scar tissue, so how effective is serrapeptase in the treatment of peyronie's disease?

Not effective. People tried enzymes over a decade ago with little success. However, it does thin out there blood and that is useful. Just don't expect yo it scars to be eaten away.

There is a fascinating article by gringovajero. Using bromelain injections. Bromelain is an enzyme extracted from pineapples. Most of us probably won't be brave enough to do this but it might interest you? He had good results.
